They differ in design choices such as throughput, decentralisation, validator requirements, smart contract support, fees, and ecosystem maturity.

When comparing Layer 1 coins, look at transaction activity, developer adoption, fees, validator distribution, bridge risk, liquidity, and whether demand for blockspace supports the token over time.
